Not only does it have a wonderful flavor and texture, but it lends itself well to every meal of the day. Almost every course of the meal, from soup to dessert, can benefit from this welcome addition to your dinner table. Most of us are familiar with pumpkin pie, but, how many other ways have you had pumpkin? There are a lot of good reasons to eat more pumpkin dishes!Most people don’t realize that pumpkins are loaded with Vitamin A – over 100% of the daily, FDA-recommended value is in just a half-cup serving — plus good amounts of Vitamins C and E, iron and fiber, to name a few of its other benefits.
